Little BBQ sauce on the veggies to shake things up?

Vegetables are healthy, everybody knows that, and so you make sure to prepare a side salad to go along with your meatloaf, you order steamed vegetables with your steak or put some lettuce and tomato on your grilled chicken sandwich. Still, there are two possible issues with you and veggies. One is that you most likely don’t eat enough of them on a regular basis, and the other is that you’re probably fed up with always eating the same veggies prepared the same way over and over again. Fortunately, there are some simple ideas that can increase your vegetable consumption and change things up as far as the way you eat them, so before you make another romaine, tomato and pepper mix, consider some alternatives.

One of the easiest ways to add flavor and vegetables to your dinner is through simple, tasty sides. But if you can’t look at another basic side salad or don’t feel like steamed broccoli again, you need to think outside of that box for a second. Grilled veggies are perfect all year round as sides for meats or fish, but also as addition to your pasta, so chop up some onions, peppers, zucchini, yellow squash, tomatoes, mushrooms and your other favorites, brush them with a bit of olive oil, sprinkle with fresh ground pepper and place on the grill, a grilling pan or under a broiler. Fran extra flavor kick instead of olive oil brush the veggies with a bit of tangy BBQ sauce, or use herbs in addition to pepper. When the veggies are done, you can toss them with plain pasta and some grated parmesan, you can place them on the side of your grilled salmon or filet mignon, or you can use them to make another veggie vehicle, soup.

Soups, especially when the weather turns cold, are the perfect way to eat more vegetables on a regular basis. Whether you make beef vegetable soup, make cream of tomato or opt for chicken noodle with carrots, with one plate you’ll deliver more vegetables to your body than you would without it. And if you’re bored of your usual soups, try your beef vegetable with different veggies, adding spinach leaves, potatoes and nutmeg, make cream of pumpkin soup with some potatoes, onions and curry to spice it up, or replace chicken with fish or seafood in your chicken noodle for a completely different flavor experience. When it comes to soup options, there are more of them than there are vegetables in your grocery store, so just get creative, mix and match and make sure to load your soup wit veggies instead of white noodles for the biggest health benefit.

There is no question, vegetables are healthy. There is also no question that most people fall into a rut with their veggies and always reach for the same ingredients and the same prep methods, ending up with the same results week after week. If you eat the same veggies over and over you’ll still benefit from them, but you’ll get bored and discouraged, which will likely lead to you skipping the same salad after a few weeks. To not let that happen, all you need is to have fun and use that BBQ sauce, cottage cheese or pesto making food processor and eat your veggies the way you haven’t eaten them before. You’ll love it and you’ll notice how much better it is for your health in no time.
