Chicken is quite rightly one of the most popular meats throughout the whole world.
It is almost fat free, is a great source of protein, super versatile and plays a major part in a lot of diet recipes. If you are able to buy an free range chicken, do so, as it will be free from any hormones or other unhealthy additions. It's also a great idea from an humanitarian point of view, as some of the mass produced chickens are kept in conditions that are quite immoral.
If you are not trying to lose weight, don't worry, there is more to chicken than low fat recipes. All the same, the majority of recipes using chicken will be, in general, better for you than the same recipes prepared using different meat, such as pork or lamb.
Here is a wonderful recipe that is sure to impress friends and family alike.
The recipe needs:
One chicken (approximately 3.5 lb)
Two C. of traditional cider
6 ea. Apples (pared and quartered)
salt (as needed)
pepper (as needed)
One teaspoonful cornstarch
1/2 C. of whipping cream
One Tbls of fresh lemon juice
1/3 C. of butter
Two Tbs of olive oil
1/4 teaspoonful cinnamon (optional)
Four green onions, (chopped fine)
Two cloves
1/4 teaspoonful ginger
One sprig of parsley, (chopped fine, for the garnish)
1/2 teaspoonful dried thyme
Two tsp. of sugar
Technique:
Clean the Organic Chicken and dry it well.
Combine a small amount of pepper and salt and rub it into the organic chicken (outside and inside)
Pour the lemon juice over the apple pieces.
Take a large frying pan or skillet and melt half the butter then add the oil.
Put half of the apple pieces into the pan and cook slowly for 5 min. (until they have browned a little)
Add the ginger and stir well, heating it a little longer to enable the ginger to give up it's flavours.
Stuff the chicken with the apple mixture and close the cavity by string or by 'pinning' it with a metal or wooden skewer.
Add the rest of the butter to the pan and heat until it melts and then put the organic chicken into the frying pan and fry until the skin is browned a little, making sure it browns equally all over.
Place the bird in a large casserole pot with lid.
Take the remaining apples, the green onions, cinnamon, dried thyme, cloves and sugar and add them all to the frying pan.
Cook for 2-3 minutes then add the cider and increase the heat to start the mixture boiling.
Once the cider mixture is boiling, add it the oven dish with the chicken and put the lid on the pot.
Put in the oven and cook for approx 3/4 hour at 200 Celsius
When the time is up, put the chicken onto a heated platter to keep warm whilst the gracy/sauce is prepared.
Skim the fat from the contents of the casserole pot and then boil the juices down until there is only one cupful left.
Pour in the whipping cream and cornstarch, and stir constantly till it reaches a nice creamy consistancy.
Season to taste, and then pour over the chicken
Sprinkle the parsley garnish over and serve.
If you are entertaining guests, you could serve the chicken with asparagus or spring greens and sauteed potatoes.
